In a container combine the Unsweetened Vanilla Almond Milk, Chia Seeds and Coconut Extract.
Place the mixture in the refrigerator overnight to allow the chia seeds to expand.
Place the sliced bananas and pineapple chunks in a snack size plastic bag.
The next morning, pour the cold unsweetened vanilla almond milk into a blender. Also add to the blender, 1 tablespoon of honey and 1/4 cup of unsweetened shredded coconut. Lastly, add in the frozen bananas and frozen pineapple chunks.
Blend until smooth.
Pour into a glass.
If you like your smoothie thicker than just use less almond milk.
If you like your pina colada smoothie sweeter than feel free to add more honey.
